Noodles:
8 oz Chinese wheat noodles,
Pork Mixture:
1/2 pound ground pork, 1 tablespoon vegetable oil, 2 cloves garlic (minced), 1 tablespoon ginger (minced), 2 green onions (thinly sliced), 1 tablespoon Sichuan peppercorns (lightly crushed), 2 tablespoons chili oil, 1 1/2 tablespoons soy sauce, 1 tablespoon Chinese black vinegar, 1 tablespoon sesame paste or tahini, 1 teaspoon sugar, 1/4 cup chicken broth or water, chopped peanuts (for topping), fresh cilantro (optional, for garnish), additional chili oil to taste
Instructions
- Cook the Noodles: Cook the noodles according to package instructions, then drain and set aside.
- Prepare the Sauce: Whisk together chili oil, soy sauce, black vinegar, sesame paste, sugar, and chicken broth until smooth. Set aside.
- Cook the Pork: Toast Sichuan peppercorns in oil, then brown and crisp the ground pork. Add garlic, ginger, and green onions, then stir in the sauce mixture. Simmer until slightly thickened.
- Assemble: Divide the noodles into bowls, top with the pork mixture, drizzle with additional chili oil, and garnish with peanuts, green onions, and cilantro.

- For a vegetarian version, substitute crumbled tofu or mushrooms for the pork.
